I love a good spritz. They’re bubbly, refreshing, and light on alcohol, which makes them hard to resist.
If you’ve never had a Hugo Spritz, think of it as the lesser-known cousin of the Aperol Spritz. It’s made with elderflower liqueur and Prosecco, and it’s one of my favorites.
With an abundance of foraged blackberries and garden cucumbers, I thought it would be fun to give The Hugo a little twist.
I love cucumber in cocktails. It’s so fresh and vegetal, and it works so well with blackberry and elderflower.
This comes together in just a few minutes, so it’s an easy one to make when you’re having friends over.
Ingredients
Blackberry Cucumber Juice
7 slices cucumber, peeled
15 fresh blackberries
4 oz water
Blackberry Cucumber Hugo Spritz
1/2 oz elderflower liqueur
1 oz blackberry cucumber juice
Prosecco, to top
Splash of club soda
Ice
Fresh blackberry and cucumber, for garnish (optional)
Instructions
1. Make the juice: Add peeled cucumber, blackberries, and water to a blender or container. You want the water to cover the ingredients. Blend with an immersion blender until smooth. Add more water to create your desired consistency.
2. Strain, if desired: For a smoother spritz, strain the mixture through a fine-mesh sieve. If you don't mind a little blackberry pulp, you can skip this step.
3. Build the spritz: Fill a glass with ice. Add elderflower liqueur and blackberry cucumber juice.
4. Add the bubbles: Top with Prosecco and a splash of club soda.
5. Mix and serve: Give it a gentle stir, garnish with a blackberry or cucumber slice, and serve immediately.
